We are back, but we are leaving again.

What a whirl wind trip to the San Fransisco Bay Area. We got back home Sunday night around 11pm and the last couple of days we were too tired to do a podcast. Yesterday we get a call from my doctor in SF to come back for an appointment Friday, so we will leave again tomorrow for another whirl wind trip. I’m surprised they had an opening so soon and please know this is for a special scan of my back, so this is nothing serious. So, needless to say we will not be putting out a show until after this next trip.

Crockpot Teriyaki Chicken

Crockpot Teriyaki Chicken

2 Pounds boneless, skinless chicken breast.

1 Package frozen vegetables – broccoli, carrots and water chestnuts (or what ever you can find)

2 Tbsp quick cooking tapioca

1 Cup chicken broth

4 Tbsp brown sugar

4 Tbsp Teriyaki sauce (or oyster sauce if desired)

1 Tbsp dry mustard

2 Tbsp ground ginger

1 ½ Tsp grated orange peal

1 Can pineapple chunks, drained

Rinse Chicken then cut into 1” cubes. Place frozen vegetables in bottom of Crockpot, then add chicken. Then put pineapple on top of chicken. Mix remaining ingredients and pour over top of chicken and pineapple.

Cover and cook low for 4-6 hours or on high for 2-3 hours. Serve over hot cooked rice.
